Nutrition Benefits of Zucchini
Zucchini is high in vitamin C—an immune-boosting antioxidant that minimizes unwanted sniffles. This vitamin also helps to build strong bones, teeth, and skin. Help heal your kid’s bruises and scrapes with this wound-repairing nutrient! (1)
Zucchini is also abundant in potassium, an electrolyte that helps maintain fluid balance on a hot sunny day or after outdoor activities. Potassium is necessary for nerve function, cardiovascular health, and childhood development. (2) In other words, zucchini is a powerhouse vegetable! Skip the mealtime struggle of getting the family to eat more vegetables with this irresistible recipe. Pro tip: Make extra. These delicious and nutritious zucchini chips won’t be on the table for long!
Homemade Breadcrumbs: Featuring Oat and Garbanzo Bean Flour
This recipe also uses healthful oat flour and garbanzo bean breadcrumbs as a healthy alternative to a traditional breading. Along with the zucchini, these fiber-filled ingredients help your kiddo stay full and satisfied between meals. Say goodbye to mid-day energy slumps! These coins offer sustained energy for schoolwork, household chores, outdoor fun, and everything in between.
Dip Options for Zucchini Chips
For the ultimate Greek-style snack or side dish, pair them with a traditional tzatziki or yogurt sauce. This sauce elevates the meal with a boost of calcium and tangy goodness. Calcium is necessary to promote bone health, muscle contractility, and nerve function (3). You can also choose to make any healthy dip with the kids.
This dish has healthy meal components that parents want and the flavor profile that children love. Not to mention, exposing your children to plain yogurt’s tart flavor can help diversify their palate and encourage adventurous food choices. Enjoy the trip around the world with these Greek-inspired crispy zucchini coins!
