No Bake Pumpkin Chocolate Chip Energy Bites
These no-bake power bites are prepared in minutes and make for the fantastic mid-day snack or tasty dessert.
- 2 cups old fashioned oats
- ½ cup peanut butter
- ½ cup pumpkin puree
- ¼ cup honey
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon/ pumpkin pie spice
- ½ cup mini semi-sweet chocolate chips

In a substantial bowl, combine oats, peanut butter, pumpkin, honey, vanilla, and cinnamon. Mix till it types a soft (but not sticky) mixture.

Once the mixture is workable, add the chocolate chips. Stir to combine.

With a substantial spoon, scoop mixture into hands and roll it into a ball. Repeat for the whole mixture.

Store in the fridge for up to a week or in the freezer.
